Smoky Chipotle-Honey Turkey Meatballs are tender, flavorful bites with a sweet heat from chipotle peppers and honey. Serve them on their own as a crowd‑pleasing appetizer, or spoon them over rice with the rich tomato sauce for a hearty, comforting meal.
Preheat the oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat. In a large bowl, combine all the meatball ingredients: 1 pound ground turkey, 1/2 cup breadcrumbs, 1 tablespoon lemon juice, 2 chopped chipotle peppers, 1/4 cup grated onion, 1 egg, 1 teaspoon garlic powder, and 1 teaspoon salt.
Shape the mixture into meatballs using a tablespoon, then place them on a prepared baking sheet. Bake for 18–25 minutes cooking until the meatballs reach an internal temperature of 165 degrees.
While the meatballs bake, prepare the sauce. In a small saucepan, combine 1/2 cup honey, 2 tablespoons lemon juice, 1/2 cup tomato paste, 1 cup vegetable broth, 1 teaspoon Dijon mustard, 1 minced chipotle pepper, and 1 teaspoon salt. Bring to a boil, then remove from heat.
Once the meatballs are out of the oven, gently toss them in the sauce a few at a time, then finish with a sprinkle of fresh parsley and red pepper flakes before serving.
